Last semester we distributed a survey to students and staff living in residence halls on upper campus. This survey was specifically designed to gather feedback about the Hilltop Center Food Court on upper campus.

There was an overwhelming response that the hours were not convenient for those wishing to dine there. Therefore, we have implemented new hours for the Spring semester which include opening earlier and closing later.

The following are the new Hilltop Center Food Court Hours.

Friday & Saturday | noon – 8 p.m.

Squawkers:

With the semester coming to an end, we’re getting excited about the upcoming holidays! We’re celebrating throughout campus with some fun decorations and specials.

In the Marketplace food court in Davies Center we’re celebrating with the 12 Days of Christmas and giving away a gift each day. For every purchase you make, you will receive a drawing slip to enter the daily drawing. Then visit our Facebook page to see if you’ve won!

Another successful Helping Hands food drive!

Blugold Dining wishes to thank all UW-Eau Claire students, faculty and staff as well as members of the Eau Claire community for participating in our Helping Hands Across America food drive on Tuesday, November 15.

As a result of everyone’s effort, over 3,300 pounds of food and $140 in cash was donated to the Feed My People Food Bank in Eau Claire. The event was a huge success as this event is one of the largest food drive donations they receive!

A special thank you goes out to the 12 campus groups that participated and collected over 1,000 pounds of food! Congratulations to the top campus group which was University Communications.

We’d also like to thank our entire Sodexo Family and recognize Carol Horndorf, Deb Heinze, Steve Perry and Heather Higgins as receiving the Sodexo Experience customer service award for their hard work supporting this project, and dedication to creating exceptional student experiences.

For every dollar donated, Feed My People food Bank can obtain and distribute seven pounds of food worth more than $10. They distribute about 4,000,000 pounds of food each year to hunger relief agencies in 14 counties in west central Wisconsin.

More than 14,500 individuals each month rely on food received from programs supplied by Feed My People Food Bank with 39 percent of them being children. Over 850 children in Eau Claire and Chippewa counties alone rely on the food bank each Friday for a pack-out which will provide them food to make it through the weekend.

We look forward to another great Helping Hands Across America event next year to benefit our local community!

Annual Helping Hands Food Drive - Nov. 15

Blugold Dining cordially invites all members of the university community at the UW-Eau Claire to fight hunger and help those in need across the Chippewa Valley by taking part in our Helping Hands Across America food drive on Tuesday, November 15. Blugold Dining will sponsor the non-perishable food drive from 8 a.m. to 5 p.m. in all campus dining locations.

All of the food items collected on the UW-Eau Claire campus will help senior citizens, single parents, the working poor, the homeless, the mentally ill and others in need throughout the Chippewa Valley.

Last year more than 3,800 pounds of food was collected and donated to the Feed My People Food Bank in Eau Claire. Blugold Dining’s goal is to collect more than 5,000 pounds of food during this year's event and they need your help!

Faculty and staff members are encouraged to collect food as a department or class project. As a special incentive for group participation, the top department or organization donating the most food per person will receive $150 worth of Catering from Blugold Dining.

Donations from the community are also encouraged. Those wishing to contribute may drop off their donations in Marketplace on the lower level of Davies Center from 8 a.m. – 5 p.m. on November 15.

Well our weather has finally taken the plunge and is a true reflection of what we refer to as our typical Wisconsin weather. But there’s no need to wear your hats and mittens all day. Instead, stop by Intermezzos Café for some warm deliciousness!

The newest addition to the Café is our new autumn drink specials, and so far they are hittin’ the spot! Also, warm up first thing in the morning with our Oatmeal Bar from 7 am – 10 a.m. Build your perfect breakfast by topping your oatmeal with mix-ins including brown sugar, maple syrup, raisins and so much more!

Blugold Dining makes special effort for international students

EAU CLAIRE — Within a month of beginning their classes at the University of Wisconsin-Eau Claire, international students have expressed their appreciation for a dining services program that makes a special effort to make them feel at home.

"In working with the staff of the university dining service, I have been so impressed with their willingness to accommodate both the dietary and culinary needs of our growing, and increasingly diverse, international student population," said Dr. Karl Markgraf, director of the Center for International Education. "Christian Wise, Blugold Dining's general manager and executive chef, has been very receptive to making changes to the menu to meet their needs. His expertise is not limited to serving the student population on campus — I know that he helps various student groups source different spices and ingredients not usually found in the average Eau Claire supermarket. Blugold Dining is very proactive in helping our international students dine better, even when they are off campus preparing their own meals, using ingredients from their home cuisines."

Through the Center for International Education and the Office of Multicultural Affairs, Blugold Dining learned that the Chinese student population had increased substantially at UW-Eau Claire. Responding to a suggestion that cooked rice be offered at every meal in the board operation, Blugold Dining researched condiments that help make rice a complete meal. Heavy soy sauce, chili paste, sriracha, regular soy sauce, dried shrimp, sesame oil, rice vinegar, red vinegar, furikake, hot chili oil and fish sauce are available wherever rice is served. Asian students have been pleased, and all students are learning from the diverse menu.
"I like all kinds of food and that's why even being a junior and living off-campus I still go to the cafeteria," said Carlos Gorina of Spain, treasurer of the International Students Association. "It is healthy food and the environment is pretty chill."
"We want our international students to feel comfortable and welcome in their new home, and recognize how important food and their housing arrangements are in their transition to living in the United States," said Dr. Beth Hellwig, vice chancellor for student affairs.

Sodexo Operations LLC, has provided Blugold Dining service on the UW-Eau Claire campus since 2002. The Blugold Dining program is administered by the University Centers, a Student Affairs unit of UW-Eau Claire.

New Chicken Venue on Campus!

Blugold Dining is excited to announce the success of Squawkers! It is the newest addition to the Blugold Dining family and is located on upper campus in the Hilltop Center Food Court.

The menu features a wide variety of chicken wings (both boneless and traditional bone-in wings), fried chicken meals, our special Chik’n Gone Wild Wings with Wild Turkey Bourbon Sauce, Potato Wedges, Cheddar Rounds and so much more!

Another great thing about Squawkers is that they’re keepin’ it local! All of the chicken is processed by Brakebush which is a Wisconsin-based company. Brakebush is even the official chicken of the Milwaukee Brewers and the Green Bay Packers, as well as a proud partner of the Minnesota Wild.

One of our most popular menu items—the Tappers Beer Battered Wings—feature Point Amber Classic beer in the batter. This World Beer Cup Gold Award Winner is brewed in Wisconsin by the Stevens Point Brewery, a brewer of high quality, full bodied, yet drinkable craft beer with over 150 years of brewing history.

Sodexo Eases Move-In Day with Fill My Fridge™ Events

Families can enjoy the rite of passage instead of driving off campus for supplies!

During college move-in day, parents at Sodexo-served campuses will be able to shop for their students' favorite items from nutritious snacks to thirst quenching beverages without having to leave campus. Sodexo is offering its second Fill My Fridge™ event at more than half of the 650 campuses it serves from Hawaii to New England–including UW-Eau Claire!

"Move-in day can be chaotic and filled with mixed emotions," said Tom Post, president Sodexo Education – Campus. "Sodexo is offering Fill My Fridge™ events for the second consecutive year because it creates the kind of exceptional experience that makes move-in day a lot easier for parents and students alike." Post came up with the idea after experiencing a frustrating move-in day with his son, followed by an hour's drive to a box store to get dorm-fridge supplies.

During resident hall move-in day (and throughout the entire year), Blugold Dining's Hilltop Center Food Court is an area where parents can purchase goods to stock their students' small refrigerators with dry goods, refrigerated goods, beverages and more!

Sodexo researched favorite resident-hall food of 18-to 24-year-old students and worked with suppliers, which included engaging local farmers and produce companies to provide local fruits, vegetables, dairy products, and bread. Sodexo is working closely with its vendor partners to help stock the fridges in residents halls.

Partners Pepsi and Coke will both offer contests for campuses that host a Fill My Fridge™ event, including a grand prize of $4,000 in the Fix Up My Room contest from Coca-Cola and a Text to Win contest from PepsiCo.

The Student Development Council Recognition & Awards Celebration took place this morning and we’re proud to say one of our own received an award. Susie Deacon was surprised and honored to receive the Student Spirit Award.

Susie is the smiling face at the cashier stand who greets the university community as they enter the Terrace. She has been a part of the Blugold Dining team for over 37 years and is considered a “celebrity” among students.

This special recognition award was presented by Dylan Jambrek, President of the Student Senate, on behalf of the entire student body. He referred to Susie as an “unsung hero on our campus” and shared many stories about Susie that deomonstrated how she has a genuine connection with our students. Dylan went on to say that when alumni students come back to visit the campus, their priority isn’t to visit a past professor, but instead it’s to say hi to their favorite dining cashier—Susie.

The Blugold Dining management team is so proud of Susie and we would like to thank her for her hard work and dedication. Congratulations Susie, we are honored to have you as part our team!

Coca-Cola's New PlantBottle on Shelves Now!

Just in time for Earth Month, Odwalla is saying goodbye to its old packaging and saying hello to a new PlantBottle packaging—the first-ever fully recyclable plastic beverage bottle produced using plants.

PlantBottle packaging is available for both Odwalla and DASANI brands. Single-serve Odwalla packages are made from up to 100 percent plant-based materials and DASANI packages are made with up to 30 percent plant-based materials. This new packaging was designed to make a difference by offering a better designed package for a more sustainable future.

PlantBottle packaging used for Odwalla is made of high-density polyethylene (HDPE) plastic which is derived from 100 percent renewable sugarcane-based ethanol. It is the first nationally distributed beverage brand to make this transition and it represents a significant step in their brand’s ongoing efforts to protect the planet.

To date, PlantBottle packaging is estimated to have eliminated the equivalent of 30,000 metric tons of carbon dioxide, or three million gallons of gasoline used to produce PET plastic bottles. Currently, The Coca-Cola Company is working to further technology so other plant materials can be used in future PlantBottle packaging. According to them, “The ultimate long-term goal is to turn waste into a resource, resulting in a carbon neutral, 100 percent renewable, responsibly sourced bottle that is fully recyclable.”

The new packaging is beginning to be introduced into the market and our campus. It is currently available in the Hilltop Food Court on upper campus and will be available soon in Intermezzos Café and the Green Bean. Stop by to see this new innovation that’s a step in the right, sustainable direction!

Blugold Dining Supports Local Charities

Last October, Blugold Dining implemented a new employee program called Jeans Day for Charity. Every Friday our employees are invited to help out a local charity by donating $1 to the fund in order to wear jeans while working. They are then given a sticker to wear acknowledging their charitable donation.

Every three months the proceeds will be donated to a different local charity. When the program first began, all funds raised went toward purchasing additional gifts for the two families Blugold Dining adopted over the holiday season. We recently presented the Eau Claire and Chippewa County Humane Associations with a total of $364 which was collected from Jeans Day participants February through March.

The Blugold Dining team is proud to support non-profit organizations within our local community. We look forward to helping The Community Table next as they were built and are supported solely by the community.

Try New Flavors for Free!

Blugold Dining is excited to host a Tasting featuring some new Pepsi flavors on Wednesday, March 30 from 5 – 7 p.m. in the Hilltop Food Court. Two of the new flavors are part of the newest Mountain Dew fan vote and the other two are Pepsi’s new Citrus Blast and Diet Citrus Blast which are very similar to Squirt.

You may remember DEWmocracy which was the online campaign to vote for the next Mountain Dew. Well, FanDEWmonium is the new, diet version. The competition is between Diet Mountain Dew Supernova with a strawberry melon flavor and Diet Mountain Dew Voltage with its raspberry citrus blend.

Well it sure doesn’t feel like Spring with this chilly wintery weather, does it? Well, we’re doing what we can to keep you toasty warm! Marketplace will be open this week with our cooks in Blu Plate Diner and sandwich artists in SubConnection ready to serve you!

Since the halls are scarce and classrooms empty, we will have limited hours all week. With the exception of the furlough day on Friday, we’ll be open each day from 7:30 a.m. – 3 p.m. in Marketplace.

New Compostable “To-Go” Policy

Due to the high cost of our disposable compostable containers, Blugold Dining will begin charging $1.00 for a compostable “to-go” container on Monday, March 28. These disposable compostable containers are only available in the Terrace on lower campus.

However, keep in mind that there is an alternative option—our reusable “to-go” containers! This option requires a $5 deposit for a large container and $3 deposit for a soup cup; but the best part is that your deposit is fully refunded when you return the containers making this option essentially free!

Our compostable program conforms to the goals of the strategic plan of the University to become more green and sustainable, and we are proud to be a part of it and offer two environmentally friendly options!

Toasted Cuban Subs Coming Soon!

Blugold Dining will be Freezin' For a Reason

This weekend our Blugold Dining team will be Freezin' for a Reason when we take the Polar Plunge for Special Olympics Wisconsin. The Polar Plunge is a cool event where supporters raise donations and jump into frozen bodies of water.

Special Olympics provides sports training and competition for nearly 10,000 athletes with cognitive disabilities in 18 different sports year-round.

But Special Olympics is about so much more than the joy of sports. According to a recent study, 80% of families in the United States say they have seen improvements in their family member's self esteem, self confidence, social skills, friendships and health thanks to their participation in Special Olympics*.

Composting Update

The Blugold Dining composing program has been in effect for almost two years now. Back in January 2009 we entered into a partnership with Veolia Environmental Services and became one of the first commercial facilities in Wisconsin to offer composting as an environmentally friendly, waste disposal alternative.

On average, Blugold Dining composts about 18,000 pounds of food and packaging each week from UW-Eau Claire. This environmental effort will conserve space in local landfills as well as reduce methane emissions by turning food and other waste materials into nutrient-rich soil.

Remember to look for the green composting containers located throughout Davies Center and Hilltop Recreation Center. All food scraps (besides bones) and most of our packaging is compostable! We appreciate your effort in helping us reduce our carbon footprint.

Helping Hands Across America Food Drive

Blugold Dining cordially invites all members of the university community to fight hunger and help those in need in the Chippewa Valley by taking part in our Helping Hands Across America annual food drive on Wednesday, November 10. The Blugold Dining program will sponsor the nonperishable food drive all day in all campus dining locations.

All of the food items collected will help senior citizens, single parents, the working poor, the homeless, the mentally ill and others in need throughout the Chippewa Valley.

Last year more than 2,800 pounds of food was collected and donated to the Feed My People Food Bank in Eau Claire. We hope to collect more than 5,000 pounds of food during this year's event and we need your help!

Faculty, staff, student organizations and residence halls are encouraged to collect food as a class project, department or group. As a special incentive, the groups donating the most food per person will receive a fantastic reward from Blugold Dining.

Donations from the community are also encouraged. Those wishing to contribute may drop off their donations at Marketplace on the lower level of Davies Center from 8 a.m. – 6 p.m., on November 10.

'Cookies for a Cause' to raise funds for local organizations

From the UW-Eau Claire News Bureau:EAU CLAIRE — The Artists Series at the University of Wisconsin-Eau Claire has partnered with Blugold Dining for a new initiative called "Cookies for a Cause." Cookies made especially for the program by Blugold Dining will be sold at all Artists Series events, creating awareness of nonprofit community organizations while also raising money for a deserving cause.

Cookies will be sold before each Artists Series performance and at intermission for $2 (cash only), with all profits going to benefit the designated cause. The following organizations will be spotlighted this season:

* The Community Table will be featured at the Golden Dragon Acrobats performance Sept. 23. An Eau Claire organization that serves hot meals to those who need food and hospitality, The Community Table is a collaborative effort of local churches, the area food bank and many concerned individuals, businesses and groups. Each day volunteers, guests and staff share a table, coming together to build community.

* The Meals on Wheels program of the Aging and Disability Resource Center of Eau Claire County will be featured at the Pro Arte Quartet concert Oct. 25. Meals on Wheels serves people who are 60 years of age or older and essentially homebound; a spouse of someone who qualifies, regardless of age; and those who are disabled and live with an eligible older person. As well as delivering healthy meals, Meals on Wheels volunteers provide a daily check on those accepted into the program and get in touch with designated contact people if there is ever reason for concern.

* The Chippewa Valley Free Clinic will be the designated cause at the Dec. 6 performance of The Rose Ensemble. Located in downtown Eau Claire, the organization provides health services, medications and advocacy for community members who have no health care alternative. The clinic staff comprises six individuals whose hours are equivalent to three full-time positions, and more than 200 people of medical and non-medical backgrounds donate their time and talent to the clinic's cause.

* The Eau Claire Area Hmong Mutual Assistance Association will be featured at the Feb. 17, 2010, performance of Michael Fosberg's one-man show, "Incognito." The organization actively helps Southeast Asian families become socially and economically self-sufficient through education and strengthening of relationships and traditions. Funded by federal, state, city and local grants, the association is also a member of the United Way of Greater Eau Claire, the United Way of Chippewa County and the Eau Claire Area Chamber of Commerce.

* Bolton Refuge House will be the designated cause at the March 1 stage performance of "The Scarlet Letter" by the National Players. Bolton Refuge House provides emergency shelter, education, support, children's services, options counseling and legal advocacy to survivors of domestic violence and sexual assault.

* The deaf and hard of hearing program of the Eau Claire Area School District will be featured at the March 14 performance of "The Hearing World Around Me," a one-deaf-woman show by Trix Bruce. This school district program provides a quality education for students who are deaf or hard of hearing in safe and accessible environments, empowering them to become productive members of society using their preferred modes of communication.

* Positive Avenues will be featured at the April 4 performance by TU Dance. A program of Lutheran Social Services, Positive Avenues is a daytime drop-in center for people with serious and persistent mental illness as well as homelessness. Emotional support, vocational and recreational opportunities, and structuring of individual schedules are available at this safe haven, located at 618 S. Barstow St.

"Cookies for a Cause" also will be sold on campus at Intermezzos (Davies Center) and Library Grounds (McIntyre Library) during the week of the Artists Series performance (or the week before if the event is on a Monday), with 25 cents of each sale being donated to the organization.

The Artists Series and Blugold Dining are administered by the University Centers, part of the division of Student Affairs.

New Dining Area for Hilltop Center Food Court Customers

Students and staff visiting the Hilltop Center Food Court now have a place to sit and enjoy their meals! The Dugout, located in the Bowling and Billiards Center on the first floor of the Hilltop Center, has been remodeled into a seating area to accommodate Food Court customers. The Dugout features numerous tables, lounge furniture, televisions and a microwave oven for guests to use while they relax and enjoy their meals.

The seating area that was previously used by Food Court customers was remodeled over the summer to provide an larger seating area for Riverview Café, which serves over 4,000 guests per day.

The Dulany Reduces Wait Time at Checkout

In an effort to improve customer service and avoid a long checkout line, we now ask that guests of The Dulany please pay for their lunch before being seated. This change in policy will allow our customers to leave when they desire and reduce the chance of being late to class or a meeting. If you have any questions or comments, please let us know.

The Dulany is open Monday-Friday from 11:30am to 1:30pm during the school year and features an elegant buffet created by Blugold Dining Executive Chef, Timothy Grayson.

Pacific Traders Opens at Hilltop Center Food Court

Delicious made-to-order stir-fries are now available at the Hilltop Center Food Court! Pacific Traders, a long time favorite in Marketplace, now has a second location open at the Hilltop Center Food Court. Guests may choose one of four proteins (tofu, chicken, beef or a weekly feature) plus a large assortment of fresh vegetables which are sautéed and finished with your choice of sauce. Pacific Traders at the Food Court is open Monday through Thursday, 4pm to 10pm and Friday through Sunday, 4pm to 9pm.

Changes in the Hilltop Center Food Court

When the fall semester starts you will see some big changes in the Hilltop Center Food Court. When entering the food court you will see that it is now surrounded by a wall to allow more seating for the busy Riverview Cafeteria. Seating for the food court will now be available downstairs in the Dugout across from the bowling alley.
Also, Pacific Traders will be replacing Enzo’s pizza in the Hilltop Center Food Court at the start of the semester. Pacific Traders is a popular food destination in Davies Marketplace and will now be convenient to the students in the Dorms.

Marketplace also has a large selection of grab and go beverages, bakery treats and salty snacks. “For Some, On Campus Employment Provides More than Just a Paycheck.”

History tells us that during difficult economic times, jobs and the people that work these jobs suffer. This is particularly true as it relates to employment opportunities for individuals with disabilities in our community. Thanks to a little-known partnership between the Eau Claire Area School District and Sodexo, a group of high school students enrolled in special education programming at both Eau Claire North and Eau Claire Memorial have been developing their employability skills on campus at several UWEC Dining venues.

The UWEC Work Skills Program has been operating in different capacities on campus for over the past decade. In the program, students from both city high-schools are enrolled in Work Skills and Work Study programs which allow them an opportunity to use knowledge gained in the classroom and apply it in real-life vocational experiences.

Sodexo known on campus at UW-Eau Claire as Blugold Dining, is a food-service sub contractor hired by the University that employs approximately 10 local high school students each semester. The students are hired in paid positions to supplement their workforce during the busy lunch rush on campus between eleven and one o’clock, in which they serve approximately 2,000 students each day.

Student workers hold a variety of jobs all related to food-service, including working in the dish-room, cafeteria dining room, serving lines, salad bars, and storerooms for both perishable and non-perishable goods.
The student’s spend approximately four class periods outside of school each day; this includes transportation to and from the University, a shortened class period on campus, lunch on campus, and most importantly working on the job each day.

Special Education/Transition teacher Tim Burns, who has supervised the program from the District standpoint for the past two years, has many positive things to say about the program. According to Burns, “This program is very unique within the state with its design and inception, thanks to the management of Sodexo. Many of our students work on the UWEC campus the entire year, without being identified by similar-aged college students as young men and women with special needs. Our goal is to introduce the skills to the kids in the classroom, give them opportunities to practice these skills, and then enter them into the world of competitive employment with limited support by both Sodexo employee’s and school district staff.” Before entering the program, students have held previous positions within the school or in the community to demonstrate basic work-readiness skills. Chai Xiong, a former participant in the UWEC Works Skills Program had this to say about his experiences. “The job at the University has helped me learn how to work as a team member. I learned how you can get more done cooperating with each other. I feel like I can do anything now and am happy I got to do this as part of school.” Chai has now moved on this current school year to a job at Goodwill Industries as well as an apprenticeship at a local automotive business.

Not only are the student’s benefiting from this experience, but so is Blugold Dining. From a business standpoint, the students are integrated into the regular employee schedule and are depended upon to perform. Thomas Sahr, manager of the Terrace Cafeteria in the Davies Center had this to say about the expectations of his high school workers. “As I often say, if I didn’t need the help, I wouldn’t have created the positions. We drive this home by requesting every effort be made to come to work; even on days that their high school is not in session (excluding weekends). Each person on our team is critical to the success of our operation.” Sahr also talked about the rewarding aspects of overseeing these young people on the job. “It is great when you are able to watch the students grow and mature in their positions and start to understand how to be successful in the job. The first few weeks the kids are quiet and seem almost scared. After a while, they finally learn that it is o.k. to laugh when the boss tells a joke.” The second reward comes outside of the confines of UW-Eau Claire. According to Sahr, “I really enjoy being around town and hearing “Hey Tom!” I look around to find a smiling person excited to tell me what they have been up to and asking what is new at “work.” It is great to hear all of their success stories and updates after they leave us.”

Sahr also mentioned that the most challenging part of this program has been creating an understanding at times with the customers. “The students have a limited set of duties with their jobs and may not always know how to handle every scenario. That’s an education piece for student, employee and customer. I, along with the district staff, work to put students in positions that will challenge them and help them learn new life skills. Unfortunately, not all of our customers (and full-time staff) understand the learning curve of high school students with disabilities. Although rare, I have received complaints about a part of our service. When I receive negative comments, I take it personally and think about how wonderful it is that these young adults are working to overcome barriers in their lives that our often beyond their control.”

Thankfully, the future looks bright for both parties invested in this program. Each year the program gets stronger with each group building off of the last group’s experiences. Sahr is hopeful that the program will continue to play an important role in Blugold Dining’s daily operations and in the school district’s vocational curriculum. Sahr also discussed how the school staff works hard to make sure the student’s are performing and learning life and work skills every day. Sahr says, “There is a misconception in the world that if you can’t find a job you can always work in food service. In today’s business and customer demands, you really need to understand how to work, be responsible and almost be intrinsically motivated. That is what this is all about.”

Viennese Ball and Great Food

The 37th annual Viennese Ball was this past weekend and hopefully you were able to attend the wonderful event. The Davies Center was busy with beautiful gowns, music and wonderful food. Here are two great recipes for you try at home with an attached video of Executive Chef Timothy Grayson walking you through the steps.

Austrian Cucumber Potato Salad with Ligonberries
(15 servings)

3 lbs. of red skin potatoes peeled and diced
1 cup chopped cucumbers
2 ribs of celery sliced
1 bunch of green onions sliced
2 tbls. of dill weed
1 16 ounce package of ranch dressing mix
¼ tsp salt
¼ tsp of fresh ground black pepper
2 cups of mayonnaise
1 cup of fresh lingonberries or blueberries

Place diced potatoes in large kettle and cover with water and boil for 15 minutes then drain and rinse with cold water in colander.
Then fold together all remaining ingredients and add berries as the final step and fold into mixture.

Paprika Chicken Schnitzel with Caper berries
(5 servings)
1 ½ Pound of boneless skinless chicken breasts
½ cup of all purpose flour
½ tsp of salt
¼ tsp of black pepper
1 cup of dried Italian breadcrumbs
1 tsp of dried oregano
2 tsp of paprika
2 eggs beaten with ¼ cup of milk added
2 tbls of vegetable oil
1 lemon sliced
1 cup of German white wine
First pound the chicken breast covered with plastic wrap with a meat mallet until thin. Do not pound too thin that it tears the meat.
This in wide dish place flour seasoned with salt and pepper.
In another dish place the bread crumbs with the oregano and paprika.
Then place the egg mixture in third pan
Dredge the chicken in the flour.
Then dip in egg mixture.
Then dredge in bread crumb mixture.
Then over medium high heat brown the chicken about 4-5 minutes on each side.
Then after chicken browned add capers and lemons (squeeze some extra juice into pan) to be cooked for 2 minutes more and then add wine for one more minute to deglaze the pan.
Remove chicken and top with sauce. Can also be topped with fried cooked egg for Holstein style Schnitzel.

Crunch Time!

Finals are almost here so Blugold Dining has planned a couple of ways to help you get your studying hours in and consume some brain food. First of all, we will start late night studying in Hilltop Food Court Monday, December 7th with free coffee available the last three hours it is open. There are plenty of tables to spread your books out, free wi-fi and it is the perfect place to grab great snacks to fuel you through the night. The Hilltop Food Court will be open December 7-10 and 14-15 until midnight and will stay open until 10pm December 11-13th for you convenience.

The Annual Night Owl Breakfast will be taking place at Riverview Café Monday, December 14th from 9pm to 1am. Refuel after your first round of finals Monday night with some scrambled eggs, french toast, sausage and much more.

Lastly, make sure to swing by the Library Grounds on your way to the Library and take advantage of our coupons available at the Library Grounds counter. Add a free shot of espresso to any espresso drink, take $1.00 off any Grande house coffee, and $.50 off any bakery item with these coupons.

Riverview Dinner Hours Extended

Due to discussions in the Dining Committee the Riverview Café will be extending the main entrée for dinner from 8 to 9pm starting November 30th. Riverview will also be lowering the cost of late night dining after 9pm to the lunch rate of $5.69 for cash and $5.12 for Blugold and Declining Balance. If you are interested in voicing your opinion or just curious about what goes on in the Dining Committee; join us Thursdays at 4pm in the Potawatomi Room (unless specified otherwise) in the Davies Center.

New To-Go Program

Starting November 30th Blugold Dining will introduce a new environmentally friendly to-go program in the cafeterias. The new to-go program conforms to the goals of the strategic plan of the University to become more green and sustainable. The Riverview Café will only be offering reusable to-go containers; no disposable containers will be available. The Terrace will offer both the reusable and the disposable containers. The disposable drink cup and cutlery set will still be available with the to-go containers. There is no cost for the reusable to-go container, but a small refundable deposit is required. Just bring your used container back and we will give you a new one. If you are done with your reusable to-go container, bring it back and you will be refunded your deposit. All deposits will be refunded based on the method of deposit. If you used your Blugold Card to pay for the deposit that is how you will be refunded. If you lose or damage the container your deposit will be forfeited.

The hours of the to-go program will be changing as well. The Terrace will have the to-go option until close every night and Riverview Café will have the reusable to-go container until 9pm. There will be no late night options in the cafeterias. The to-go option will remain at one to-go a day in both cafeterias. The 50/50 Block Meal Plan Recap

We had a couple of questions about the new 50/50 block plan that we would like to go over with you. The 50/50 block plan is a meal plan that gives you 50 cafeteria meal “swipes” and $50 to use in any retail dining location for only $300. This plan DOES roll over from year to year until you end your relationship with the university. The 50/50 Block Plan is available to all students living off campus. Chancellor’s Hall and all faculty. This is a great way for you to grab a meal when it is convenient for you. Hispanic Heritage Month

Hispanic Heritage month started September 15, 2009 with Costa Rica, El Salvador, Guatemala, Honduras, and Nicaragua celebrating their independence. Mexico and Chile are not far behind celebrating their independence September 16 and 18. The estimated Hispanic population of the US as of July 1, 2008 is 46.9 million, making people of Hispanic origin nation’s largest ethnic minority. In honor of Hispanic Heritage month The Terrace and The Riverview Café will be preparing special meals featuring signature flavors of Chef Roberto Santibanez. There will be two dinners (September 23 and October 7) and two lunches (September 30 & October 14). Sign up at either cafeteria on the special meal dates to win a cookbook by Chef Roberto Santibanez. One cookbook will be given away at each cafeteria. Names will be drawn by Friday, October 16.

The Dulany will also be serving their annual “Sabor Latino!” lunch Thursday, October 8 from 11-2. Reservations are recommended. Talking Trash

Hopefully everyone is having a smooth first full week. All of you have probably noticed our many garbage receptacles around the dining areas. It may seem confusing at first, but please take the time to separate and throw your trash items in the appropriate bins. Signs with pictures and descriptions of what can be disposed of in each are located on top and on the front of the bins. All food scraps are compostable along with our eco-friendly paper plates, brown napkins, clear plastic cups, straws, utensils and salad to-go containers.

UWEC is proud to be selected as the first commercial composting site in Eau Claire and we are trying our best to become more environmentally responsible and conforming to our University’s strategic plan to become an eco-friendly operation. If you have any questions about what you can compost or recycle please let us know!

In The Terrace, the seating capacity has been increased and new food options will be available beginning this semester. The a la carte dining area known as the Little Niagara Inn, which included Ultimate Baja and Salad Toss, now is incorporated into The Terrace, and its specialized menus are now part of the cafeteria.

Guests visiting The Terrace will find main entrees, exhibition cooking and a deli sandwich station in the main serving area along with ice cream and desserts. Soup, salad bar, cereal and beverages will be available next to the main seating area and our grill, pizza station and a new pasta bar will all be located in the Little Niagara Inn.

Marketplace, the food court on the lower level of Davies Center, also has been remodeled and will offer additional menu options formerly found in Ultimate Baja and Salad Toss. Intermezzos, the dining area centrally located in the Blugold Room, has been expanded to offer soups and a greater variety of sandwiches and other grab-and-go options for lunch patrons.

Welcome the New Executive Chef

Soon the campus will be buzzing with students again, back to UWEC for another exciting school year. Blugold Dining has made quite a few changes over the summer for you to explore. We will go into more detail about those changes in future blogs. We also want to take this time to welcome our new Executive Chef Tim Grayson. Chef Tim received his Masters Degree in Hotel and Hospitality Management from the prestigious, Ivy League Cornell University. He comes to us most recently from Rio De Janeiro, but calls Little Rock, Arkansas home. He currently owns a restaurant in Northern Brazil named Paladar, which means "Taste" in Portuguese. Tim began his diverse career at Walt Disney World in Orlando but has since worked worldwide and on several cruise ships. We look forward to experiencing Tim’s many culinary and cultural influences from the different countries he has explored along his culinary journey. Tim is married and has a daughter and granddaughter in Nashville, TN. Please join us all as we welcome Chef Tim Grayson to our campus.

The Blugold Dining catering department is currently looking for students interested in working at the Viennese Ball, April 17 & 18, 2009.

This is a great opportunity to see the wonders of the ball and earn some extra money at the same time. Students can choose from an array of jobs including, but not limited to, cocktail wait staff, bartender, busser, bar runner, torte server, cashier, and deli attendant. There are also a variety of positions availablefor those looking to work behind the scenes.

The shifts tend to start in the early evening and run until clean up is completed. A number of Blugold Dining locations will be closed or have limited hours as we get closer to Spring Break. On Wednesday, March 11th, Café a la Cart in the Haas Fine Arts Center will close and on Thursday, Café a la Cart in Hibbard Hall will close. Also on Thursday, Library Grounds will close for the duration of the break and the Hilltop Center Food Court will close one hour earlier at 11pm. On Friday, The Dulany and Higherground will be closed and a number of dining locations will be closing early. The Dulany will honor Black History Month with a special theme buffet on Thursday, February 19th and celebrate Fat Tuesday with a Mardi Gras theme buffet on Tuesday, February 24th. Blugold Dining Composting Program

This January, Blugold Dining in partnership with Veolia Environmental Services, has become one of the first commercial facilities in Wisconsin to offer composting as an environmentally friendly, waste disposal alternative.

The composting program, which has been in development over the past several months, will conserve space in local landfills as well as reduce methane emissions by turning food and other waste materials into nutrient rich soil.

Compostable items include food scraps (no bones), Green Mountain coffee cups, lids and stir sticks, eco-friendly plates and napkins, and corn based soda cups, lids, straws, knives, forks and spoons. Other items such as soup and salad containers may be added to the list of compostable items as they become available.

Guests may dispose of food and several other compostable items in green composting containers located throughout Davies Center and Hilltop Recreation Center.

Steak Lunch

All students, faculty and staff are invited to our next Steak Lunch on Thursday, January 29th in the Terrace and Riverview Café. All Blugold Dining locations, with the exception of Blu Plate Diner in Marketplace, will be closed until the Winterm session begins on January 5th. Blu Plate Diner will be open 7:30am to 3pm for breakfast and lunch, Monday, Tuesday and Friday of Christmas week and New Year’s Week.
Blu Plate Diner, Sub Connection and a self-serve salad bar will be available starting Monday, January 5th.
